A huge, meaty root plant, beetroot is used as a vegetable. Its thin, smooth, superficial skin comes in a variety of colors, ranging from reddish-orange and purple-pink to a brownish tone. The pulp is often dark crimson red with purple undertones, and it tastes mildly sweet.
